The Last Supper Woman

This is from the Los Angeles County Museum of Art. It is Pedro Berruguete's LAST SUPPER (1503).
Who is that woman?

Is she the waitress, crawling under the table to pick up the tip? If so, how big a tip did they leave her?

Or...
Is she there to surprise the guest of honor?

Or...
Is she some woman crawling under the table so as to appear that the Last Supper was a
Men Only event?

I think her name was Lydia but it may have been Susan.
